Ingredients 24 ounces prepared pizza dough 8 slices prosciutto 2 cups ricotta cheese, drained ½ teaspoon salt ½ teaspoon freshly ground black pepper to taste ½ teaspoon cayenne pepper 1 ½ cups finely diced smoked ham 4 ounces fresh mozzarella cheese, thinly sliced, drained on paper towels 1 teaspoon. Combine ricotta cheese, ham, mozzarella, salt, and pepper in a mixing bowl and refrigerate until ready to use. Using a wooden spoon, stir the filling until well combined. Using a lightly floured rolling pin, roll the dough out into 2 rounds.

Place 1 dough round on the paddle spread with coarse sea salt. I recommend buying a prepared tile baking stone for all pizza and bread working at home. They are available at gourmet. Preheat the oven to 400 degrees f. Prepare the bread dough as directed, cutting the dough into 2 pieces. In a mixing bowl combine ricotta, mozzarella and egg. Add ham & mix thoroughly. Roll the dough into two rounds. Spoon the filling onto the center of the dough rounds.
