Preheat the oven to 350 degrees. Spread the crackers on a baking sheet. Cut ham slices in half, finely dice parsley and cut chunks of brie. Assemble ham and brie bites by folding the ham & placing it on the cracker and put the brie on top of the ham.

Layer one side with ham and brie, and top with the other half of the loaf. Step 1 assemble the sandwiches by layering the ham, brie cheese, apricot preserves, and mustard in equal amounts on two pieces of bread, topping with the remaining two slices of bread. Brush the top of each sandwich with olive oil. Step 2 heat a grill pan over medium heat. Once the pan is hot, lie the sandwiches, oiled side down, in the pan. Scrape away the white rind, and bake at 350 degrees for about 15 minutes. Once it’s done baking, dip away! If the centre does not melt completely, then just peel away the layer in the centre, to expose the melted cheese underneath it. A mini, dippable brie fondue!
